"Adorable" is a fine go-to. Also, they get fatter, then skinnier and longer, then fatter, then skinnier and longer, etc.

I have a new nephew, and my mom said he looks like me, and put our baby pics side by side. I was like "Yeah, we sure do both look like babies..."

In the Netherlands there is a comedian Herman Finkers that had a sketch in one of his shows related to this problem: What to call an ugly baby?
His solution was to call them "a sweet baby" ("een lief kind"). His neighbours have the sweetest baby he'd ever seen in his life.
So next time you're at a loss what to say about a baby, just call it a "a sweet baby" :-)
